• Extensive hardening process with deep freeze treatment results in a 58 HRC blade, which is hard, tough and has a long cutting edge, but can also be resharpened easily and effectively
• A smooth, slightly curved edge is the "standard" for most common chef's knives, as it allows a clean, smooth cut in soft and also harder cut materials with ease
